Head Sushi Chef - Upscale Hospitality Group

Our client, an upscale hospitality group is seeking a Head Sushi Chef to join their team in the Scottsdale, AZ area for their brand new restaurant opening! The Head Sushi Chef will be responsible for mentoring and developing all Sushi team members as well as ensuring consistency in all food production and operations.


Responsibilities:

  • Directly supervise and oversee the work of Sushi Chefs, Sushi Sous Chefs, line cooks, etc.
  • Schedule all team members. Interview and hire back of the house staff based on the Corporate’s assessment of labor allocation and budget.
  • Approve time records and overtime requests of restaurant personnel to meet the restaurant's needs.
  • Responsible for compliance with Occupational Safety and Health Standards and company safety rules within the restaurant.
  • Direct subordinates in the receipt, inventorying, stocking, organizing, and proper storage of food products, cleaning the sushi station, and performing general housekeeping tasks.
  • Evaluate and review the performance of the Sushi team both formally by conducting "one on one" evaluations and informally on a quarterly basis with all salaried BOH employees.
  • Coach employees to improve and maximize performance, commitment to the company, and commitment to quality and service.
  • Teach and motivate the sushi team regarding customer service skills, techniques and performance standards..
  • Follow tasting guidelines set forth by corporate. Tastings to be conducted once monthly.
  • Ensure that all equipment is up to standard and operational.


Qualifications:

  • At least 4+ years of Culinary Management experience, with at least 2 years as Executive Sushi Chef in an upscale / fine dining establishment.
  • Strong knowledge and attention to detail on back of the house operations including staff supervision, inventory controls and food/labor cost, and product quality.
  • Strong communication, leadership, and conflict resolution skills.
  • Stable and progressive work history; Strong work ethic.
